Offering a provincial Italian dining experience, Novaros is a special kind of place, an intimate restaurant specalising in local produce. The dining room of our Edwardian home is warm and inviting with vibrant red walls surrounded by artwork by re-known local artist Junko Go.  

With lush surrounds in the renovated Edwardian homestead, we're here to make you at home in our dining room & take you on a special journey that is best enjoyed slowly.

Our local produce is to warm & delight. Our menu highlights the freshest of Tasmanian produce and Italian elements that combine perfectly to create an exceptional experience. 

Chef Nicholas Hooper offers signature dishes such as fresh seafood broth and Fettuccine al gamberoni (fettuccine with pan seared prawns), local oysters, slow-roasted Mount Roland beef cheek with an aromatic jus, Flinders Island green-lipped abalone sauteed in white truffle oil with Swiss brown mushrooms, Cape Grim Rib Eye with whiskey jus, and plump scallops from Stanley when in season.
